    – Onomichi style ramen is famous for its use of a shoyu-based broth enriched with suspended pork back fat (known locally as seabura). The pork fat isn’t emulsified into the soup — instead, small white globules float on the surface, giving the broth a glossy, almost shimmering look. This addition not only adds richness but also acts as a thermal “lid,” helping the soup stay piping hot throughout the meal. The fat is often ladled in at the very end, meaning you can sometimes see it slowly melting into the dark soy broth as you eat.

    – A unique historical quirk is that dried small fish — typically Niboshi (dried sardines) — are a key part of the soup’s flavor base, alongside chicken bones. This is unusual for ramen outside of certain regional shoyu styles and reflects Onomichi’s history as a port city in Hiroshima Prefecture. Fishermen and shipyard workers often sought out this high-energy, umami-rich soup, and the marine influence remains a defining characteristic of the style.

  9. 尾道ラーメンは僕も現地で一度食べましたが、あれは好みが分かれると思います。
    僕も正直好きな部類ではなかったです。

    醤油ラーメンなら、兵庫県明石市にある「mendokoro ichi」というラーメン屋さんの“濃口醤油”が個人的には最高です。
    お店の場所はかなりわかりにくいですけど笑
