    – Sano became a ramen town early. In the early Shōwa years it had nearly 160 ramen shops for a population of about 50,000. In 1988, local owners formalized things by founding the Sano Ramen Society to promote the style.

    – The signature hallmark of this style is its bamboo-pole noodle making method, called aodake-uchi. Cooks sit one leg over a green bamboo pole and use body weight to knead and roll high-hydration dough. That traps tiny air pockets, which helps the noodles cook fast and stay springy with a light curl.

    – The broth in Sano is usually clear, soy-forward, and built on chicken with occasional pork and a light fish dashi. Many locals attribute the town’s soft spring water as part of the broth’s clean flavor profile, as Sano’s Izuruhara Benten Pond is recognized as one of Japan’s national “100 Famous Waters”.

  10. I’m starting to notice a pattern where the original styles are created by Chinese chefs coming to Japan, does anyone know why this is the case? And if i’m not mistaken, these all were created in similar times too
